Mini Little Cheesecakes!!

Yummy Little Cheesecakes

These are delish and have a faster cooking time because of there smaller bite size. 

Crust:
1 cup of cookies, crushed (I used oatmeal cookies crushed)
2 Tablespoons Butter, melted

Filling:
2 - 8oz. packages of cream cheese, softened
2/3 cup sugar
a pinch of  salt 
2 large eggs
1 teaspoon vanilla
1/2 cup sour cream

Preheat your oven to 300 degrees
Place liners in 24 muffin cups.

Mix cookie crumbs with melted butter together and spoon into each muffin cup and gently pressing down to cover the bottom of each muffin cup.
Cover and set aside.

To make filling combine all filling ingredients and mix thoroughly  then spoon on top of crust filled muffin cups till just about full and evenly split between all 24 cups.

Bake for 18-20 minutes until firm to touch but still soft. Chill for several hours or overnight in the refrigerator.

Garnish with powder sugar and slice berries.
